Lasagna Rolls

I don't know if this became of me being very cheap, or just a pet peeve...but i always hated throwing away those extra lasagna noodles i didn't need. I was torn between saving those last 3 noodles in my pantry, for who know how long or just throwing them away...neither option was ideal to me. And then i got thinking, don't worry this isn't a scary story..lol..some of my thoughts do turn out ok! And i was thinking, man i should just roll them up jelly roll style and make them individual. I am sure i am not the first person who has done this, but it was a hit! I used all my noodles..was able to freeze a couple servings and i have a child with allergy's, so i could make the rolls individual to the person even, and it wasn't a pain! This is my recipe.. which honestly isn't one..its just what i threw together..you can adjust to your family's taste,


Lasagna Rolls




















Lasagna Rolls

1 pkg of lasagna noodles
2 jars of sauce
*a tub of ricotta cheese
*a tub of cottage cheese
*1 eggs (great binder)
*4 garlic cloves (i used preminced Jarred)
*2 cups of mozzarella, divided
*1/2 cup of parmigiana cheese, divided
Italian spices to your liking (i use basil, oregano, and some parsley)

Boil noodles to package directions, (while they are boiling you can throw all the ingredients together in a mixing bowl and mix it up by hand quickly, only do 1 cup of mozzarella and 1/4 cup parmigiana in the bowl though, i do not like super herby filling so i just sprinkle my herbs in to taste)drain and rinse in cold water (only because this helps with cooling the noodles down so you can handle them sooner) I had to use 2 pans for this recipe..a 9x13 and a 11x7. Pour sauce on the bottom of both pans. start laying out your noodles flat on your counter and laying the filling on a single flat layer..and then roll them up! cover with another layer of sauce and sprinkle with i cup of mozzarella and 1/4 cup of parmigiana bake at 350 and then enjoy! yum!

I serve them with meatballs on the side in the rest of the sauce you didn't use ..putting meat in the roll up i think would just make them messy.

Craft Time!

Elijah had off from therepy last week, so we had some extra time to do some crafts.....
So a craftin' we did!

My kids jaw dropped...mommy bought cereal!  They may, or may not of  ripped it off the paper with glue and ate it..i wont confess! I never ever buy cereal, almost every morning i make my kids breakfast.  Cereal never fills my kiddos up...but they took advantage of this craft... spent most their time eating, so this craft was a little tricky for us ;)

Next Michaels had these foam stickers on sale..this craft was a hit..the whole bucket was $3.50..half off and they loved it!

This is a big deal, Elijah hates being praised for a job well done(if he does something and we tell him "great job buddy" he will then crinkle it up and throw it away or rip it up and stomp off), one of the reasons i did the craft a day was to make him learn to show daddy when he came home, and learn to accept a job well done. By the end of the week he actually hung this on the fridge! i was so excited..slowly but surely!

 And now the very best part.....
They made a stage of my kitchen table......

And put on a show for me....yeah, be jealous

And they thought it was awesome! 
At the end of the week i had gotten sick, so we missed a day of crafting to me laying down and daddy ended up coming home early and took them to the play place. If you want to see the other crafts we did check out my previous posts...we had fun! Love my little family!

Getting All Nesty



This Week Elijah had off of therapy and i did light duty of schooling with miss Julia, maybe about half a work load. I thought i would take advantage and do some crafty stuff, sense i typically don't have much time for that, darn pintriest! gave me so many ideas..lol..here are some of my completed ones, i have some new stuff on deck i want to do, but more organizational stuff...

Knit hat and blanket set..do this..its so satisfying and pretty easy, just get a thicker knit..this was thin and a bit of a pain to work with seeing i don't have special needles or a serger..the blanket is double thickness...and i love the style of the hat! This is for Mr Asher

Who needs props when you have a clear plastic cup? Haha!

Menu board, i will add the meal tabs as i go, and as i make them...that will be allot of work and i frankly dont have the time for it, so i will do that as i go :) Its nice for Kris to see the meals coming up and he gets all excited..i see the work, he sees the food ;) figures!

Another Knit blanket and hat set i made, again blanket double sided,  a different style of hat..fun project!





Pacifier Case, holds 2 of them..or as my kids call them,  nigh nights (night nights).. Julia made that up as a baby and it stuck) Lined in vinyl 


I have a friend custom making a diaper bag for me right now, that has this matching fabric (see i don't do everything)  i will post pics of that when i have it and its done but this is the finished product closed.

I had a fun week crafting! I will post pics of the kids crafts we did soon.....

At Least I tried..Right?

I am currently cracking my self up..you know as a Mom you have ideas and how things will turn out, and they never go as planned. I had one of those today. I have been doing special crafts with my kids all week..and today was no different, i will post another day on all the crafts we did this week, but today i also wanted to make something with the kids. I have never made them jello, not that i remember at least. So I was all like..i will be cool and w can make a snack together, a special treat!. Then i read the directions..Your supposed to boil water..so i scratched the kids helping and made it myself. I decided i would do blue jello with little fishies swimming in it..look like mini aquariums..they each will have their own and it will be special and fun...My ideas always look so great in my head!

My beautiful creation..looked like a morbid dead fish scenery, the kids reaction? "mommy what happened to the fish"? "they are sleeping on the bottom, don't ask questions its tasty so just eat it"  Well, none of them ate the fish, they currently want to put real water in the cups and revive them, bahahahaha...i love motherhood!

February Break

At our house Elijah gets a whole week off! A whole week, that we get to decide our schedule's..and what we do when, i don't have to plan my day around numerous people in my home..suffice to say, we are a lil excited. I thought we had therapy still this week, but last minute the county changed their mind. So I planned some activity's out with the littles to really enjoy the time we have :) Our activity today has worked great..its kept the kids busy, and supper is all prepped and my dishes are all washed and i was able to write this post ;) I have this tagged to do for months on pinterest, and man, i wished i did it sooner...all 3 of my kids really enjoyed it! we built little city's along side the tract with their toys (bat house, little people zoo, and a fire station) all it took was masking tape and a little crawling around on the floor. Julia's reaction "mommy, this is so strange" lol, yes dear..mommy typically doesn't masking tape the carpet, but hey..go have fun!

I was surprised even ty had fun with it!

Sew Pinteresting!

I thought i would show you my finished project I got off of pintrist the other day. With summer coming i have been keeping my eyes open for summer clothes for my Juia. Which is always a real hard find for me. I don't understand  the attraction of dressing your 5 year old like a hooker, but whatever...anyway this was a quick easy project for me...origionally i was not gonna put the hearts on, but my sewing machine litterally ate a chunk of the shirt and left a huge hole..so i had to adapt a little!
Old jeans get a new look..and Julia thinks anything i make her is super cool :) i had most of the materials on hand so it was fairly cheap for me to do! i may make another outfit like this..different applique and color with the jeans she has gotten to tall for, her waist rarely grows out of anything. I love the custom look. And she still looks 5, which makes mommy happy :)..the only thing i didn't do on the link below, i actually appliqued  the shoes..i didn't leave the edges raw. I used quarter fat material, it was on sale for 1.29 for one and i only needed one for the dark fabric and one of the light with lots left over! you should totally try this if you have little girls in your life!

He Speaks!

Please note: I Kinda annoyed Elijah intentionally  to get him to talk for the camera..he hates the camera. He is learning to speak in phrases, more than the typical word by word speech pattern. But we are getting there and i am very proud! Enjoy!

Valentines Day

Holy Cow its been awhile since I blogged, and i have missed it. So much to catch up on, and we will..But i thought i would show you how we celebrated valentines day..albeit i do have to admit..i think this holiday is a little to "made up" for my taste, i think its important to take time to say "i love you" so we tend to make this a "i love my kids holiday" and celebrate our love for them this day :) Kris and i usually buy a card for each other and i always get flowers...but we use this day to talk about loving people, and the importance of it.

So when daddy arrived home from work with a 3 balloon bouquet the kids were so excited :)


I honestly don't know what Elijah was doing here..lol..pondering how much he loved his balloon maybe?!


Earlier in the day Julia and i made lasagna rolls (or "basanga" rolls as she calls them, and i have decided not to correct her grammar until she is 16)...mmmm...i think i may prefer them to lasagna, just in the fact is uses all the noodles in the lasagna box and it serves individual servings..she is such a good helper :)
  and we had small gifts for the each of them, and they loved it! Elijah kept saying "birthday cake"..he quite doesn't get the whole holiday idea yet ;) Julia was sad to see the day end..cause you know she "loves every one in the whole world" and honestly Titus was just happy to carry his balloon around and call it a "baboon" hehe..so cute!
          So we had a great V Day with our loves :) So happy we have holidays to remind us to celebrate the small things, like our family, and how much i love them!
